Heritage Garden 2018
Interns explored the relationship between nature and the human experience through the lens of diet, culture, and community relations incorporating various local African American resources working on environmental and cultural sustainability issues.
Our first week together, we toured the AACC gallery, read and discussed articles about urban farming and took a field trip to Inspiration Kitchens, a Chicago restaurant and training facility that serves contemporary dishes made by students of their Foodservice Training Program. Finally, we watched Sustainable, a documentary where farmers and others discuss the history leading to the sustainable food movement and how it could change what we eat in the future.
During our second week, we had guest speaker Iyana Simba speak about environmental policy and students worked on scrap books about the most impactful things they learned so far during their internship and also reflect on their personal growth throughout the summer. At the end of the week, students presented their scrap books.
